Ingredients
- ¼ c. honey
- 1 c. buttermilk
- 1 egg
- 1 c. yellow corn meal
- 1 c. unbleached flour
- 2 t. baking powder
- ½ t. baking soda
- ½ t. salt
- 3 T. melted butter
- Difficulty: easy
Directions
Preheat oven to 425 degrees. Beat together egg, buttermilk and honey. In a separate
bowl, mix together all the dry ingredients. Combine the wet and dry ingredients and the
melted butter. Mix well. Pour into a greased 8” square pan and bake until golden, 20
minutes. This recipe can be easily doubled. Place in a greased 9 by 13 pan. Bake a
little longer—probably more like 30 minutes.
