Delicious Cornbread

  • ¼ c. honey
  • 1 c. buttermilk
  • 1 egg
  • 1 c. yellow corn meal
  • 1 c. unbleached flour
  • 2 t. baking powder
  • ½ t. baking soda
  • ½ t. salt
  • 3 T. melted butter
  • Difficulty: easy


Preheat oven to 425 degrees. Beat together egg, buttermilk and honey. In a separate
bowl, mix together all the dry ingredients. Combine the wet and dry ingredients and the
melted butter. Mix well. Pour into a greased 8” square pan and bake until golden, 20
minutes. This recipe can be easily doubled. Place in a greased 9 by 13 pan. Bake a
little longer—probably more like 30 minutes.

This is from the Moosewood Cookbook. It is just terrific by itself or with soup of chili! You can really taste the honey in it
