Buttermilk Waffles with Honey Whipped Cream

  • 3 eggs, separated (room temp preferred)
  • 1 3/4 c. buttermilk
  • 8 T. (1 stick) butter, melted
  • 1/4 c. honey
  • 1/2 t. vanilla
  • 1 3/4 c. flour
  • 1 1/2 t. baking powder
  • 1 t. baking soda
  • 1/2 t. salt
  • 1 c. heavy cream
  • 2 T. honey
  • Oranges (about 3 to 4)

Beat egg whites in mixer bowl until stiff.  Set aside.  In same bowl, combine egg yolks, buttermilk, melted butter, honey and vanilla.  MIx until well blended.

Thoroughly combine flour, baking powder, baking soda and salt.  Add to yolk mixture.  Add 1 c. of the whipped egg whites to lighten the batter.  Carefully fold in the rest of the egg whites.

Whip 1 c. whipping cream with the 2 T. honey until stiff.

Peel and segment oranges.  Cut into small bite sized pieces, about 2-3 per segment.

Preheat waffle maker.  Follow instructions for your maker for amount of batter and heat.  Cook each waffle until golden.  Keep warm in 200 degree oven, if necessary.  Top with a generous scattering of orange segments and a dollop of whipped cream and serve.
